Sweet and Sticky Chicken


This recipe will serve 4

3 boneless, skinless chicken breast cut into 1/2 inch cubes or strips

2 cups flour

Salt and Pepper to taste

1 tablespoon oil

4 tablespoons brown sugar

4 tablespoons honey

1/2 cup + 6 tablespoons low sodium soy sauce

4 teaspoons ginger

3 garlic cloves minced

Mix together brown sugar, honey, soy sauce, ginger and garlic in a small sauce pan

Simmer on low while chicken cooks

Coat chicken in flour, salt and pepper

Heat oil in large skillet over medium heat

Add chicken and cook until brown on all sides, takes just a few minutes

Pour sauce over chicken and simmer until thick, 10 minutes or so

Feel free to add any veggies to this dish you have on hand. I added broccoli, cauliflower, water chestnuts and bamboo shoots

Serve with rice and chow main noodles



Broccoli Soup


This will make about 6 servings

1 cup chopped onions

6 tablespoons margarine

6 tablespoons flour

1 cup water

1 1/2 cup veggie broth

1 1/2 cup milk

4 cups cooked broccoli

1 teaspoon onion salt

1 teaspoon garlic powder

1 teaspoon adobo

You can add any other veggies you like. This is what I had at the time of making this soup.

Sautee chopped onions in butter

Stir in flour to form a thick paste

Slowly add the water, broth and milk stirring constantly

Bring to a boil for 1 minute

Add the veggies and seasoning


Reduce heat and simmer for 15 minutes

I used my immersion blender to chop up the broccoli


Simmer for 10 more minutes

Garnish with shredded cheese and enjoy!


Chocolate Chip Cookies


Makes about 7 dozen small cookies

3/4 cup sugar

3/4 cup packed brown sugar

1/2 cup butter softened

1/2 cup vegetable oil

2 eggs

1 teaspoon vanilla extract

2 1/4 cup flour

1 teaspoon baking soda

1 teaspoon salt

12 ounces chocolate chips

Preheat oven to 375 degrees

In a large mixing bowl, combine sugars, butter, oil, eggs and vanilla until creamy

Slowly add flour, baking soda and salt until well mixed

Stir in chocolate chips

I dropped 1/2 teaspoon full’s on parchment paper lined cookie trays and baked for 7 minutes

I let them cool on the parchment paper


Ham and Pineapple Fried Rice


This recipe will serve 4

1 cup uncooked rice

2 tablespoons sesame oil

2 cups diced ham

1/2 cup peas

1/2 cup julienne cut carrots

1/2 cup julienne cut celery

1/2 cup onions cut into strips

1 cup pineapple chunks, reserve liquid

3 eggs beaten

2 tablespoons sugar

1 teaspoon salt

1 teaspoon pepper

1 teaspoon garlic powder

1/2 cup low sodium soy sauce

1 teaspoon ginger


Cook rice according to package directions. Instead of cooking in all water, replace half the required amount with pineapple juice

Heat sesame oil in a large skillet

Cook carrots and celery over medium-high heat about 2 minutes

Add onion and continue to cook for 2 minutes

Stir ham into pan for another 2 minutes

Add pineapple and peas for another minute

Push everything to the side of the skillet

Pour beaten eggs into the center of the pan

Cook eggs for about 30-45 seconds then mix together with everything in the pan


Mix in rice, sugar, salt, pepper, garlic powder and ginger


Cook until heated through, about 3 minutes

Pour soy sauce over everything and mix well

Top with sesame seeds and crunchy noodles



Mystic Scramble


I used to work in a hotel restaurant. This was my favorite breakfast.  The chef would make it for me often.  He was the greatest!

Mystic Scramble

This will serve 2


1/2 cup chopped onions

4 eggs scrambled

2 slices American cheese

1/4 cup cheddar cheese

3 tablespoons cream cheese


Sauté the onions until tender

Add scrambled eggs and cook until almost set

Stir in all the cheese and mix well

Serve with home fries and toast

Orange Chicken

This recipe will serve 4

2 breaded chicken breasts cut up or 6 strips of breaded chicken fingers cut up or 20 ounces of popcorn chicken

2 cups orange juice

1 cup brown sugar

6 tablespoons orange marmalade

4 tablespoons soy sauce

2 tablespoons olive oil

1/2 teaspoon minced garlic

Cook chicken according to package directions.

To make orange sauce, combine all ingredients in a saucepan.  Simmer for 15 minutes or until thick.

Mix 1 tablespoon cornstarch with 3 tablespoons of water and add to boiling liquid to thicken if needed.

Remove from heat and mix with cooked chicken

Serve with vegetable and rice of your choice

Top with sesame seeds and Chow Main Noodles
