Baked Brown Sugar Sweet Potatoes

My kids ask for these every family get together! Hope you enjoy them too.

 

Makes about 8 servings

8 cups sweet potatoes cut into chunks

1 teaspoon cinnamon

1 teaspoon vanilla

1/2 cup butter

1 cup brown sugar

1 teaspoon salt

Mini marshmallows

 

Peel and chunk sweet potatoes into bite size pieces

Bring a large pot of water to a hard boil and add sweet potato chunks

Boil for approximately 15 minutes

While the potatoes are boiling,

Preheat oven to 350 degrees

 

Melt butter in a small sauce pan over low heat

Add cinnamon, vanilla, brown sugar and salt

Stir well to combine

Drain sweet potatoes and pour into a greases 9×13 pan

 

Pour butter mixture over potatoes

I used a spatula to flip and coat the potatoes in the mixture

Bake in the preheated oven for 15 minutes

 

Remove from oven and top with mini marshmallows, about half a bag or so

Return to oven for 10-15 minutes or until marshmallows start to brown

I never had Haluski until I started hanging round PA!  My husband makes it wicked good!

 

Makes about 8 servings

16 cups large chunked Cabbage

2 cups large chunked Onions

1 1/2 cups Butter, divided

Brown Sugar

Salt and Pepper to taste

Pasta cooked according to package directions, we like to use Pot Pie Squares made by San Giorgio

 

Melt 2 tablespoons butter in a large pan

Sauté cabbage in butter until tender

Add 1 tablespoon brown sugar

Sauté a couple more minutes then transfer to another bowl to keep warm

Repeat sautéing cabbage steps until all the cabbage is cooked

Sauté onion using the same steps as sautéing the cabbage

Transfer the cabbage, onions and noodles to a large stock pot

Add more butter to coat well and keep it from sticking

Cook until cabbage is soft and cooked down, approximately 15 minutes

You can also transfer to a crock pot and cook it down that way

Salt and pepper to taste and enjoy!

Code Red Mountain Dew Jelly

I made this for my big kids. It was a special treat and not something we have on hand everyday.

Makes 3 half pints and 3 quarter pints

3 1/4 cups Code Red Mountain Dew or any soda

2 tablespoons lemon juice

4 1/2 cups sugar

1 packet of pectin

 

Combine 3 1/4 cups of the soda with 2 tablespoons of lemon juice

Bring to a brisk boil and time for 3 minutes of brisk boiling

Add 4 1/2 cups of sugar

Bring to a rolling boil

Time for 3 minutes

Add 1 packet of liquid pectin (3 oz packet) and bring back to rolling boil

Time for 1 minute

Remove from heat and let it set a minute or two to settle down, foam should disappear

Ladle mixture into jars leaving 1/4 inch head space

Remove air bubbles

Add more mixture to bring the head space up to 1/4 inch

Wipe rim, apply lid and ring

Process for 10 minutes in a boiling water bath canner

After 24 hours have passed, remove rings and wash jars

Label jars with date and store.  Do not stack jars.

Fruit Pie

1 (18 ounce) package of refrigerated sugar cookie dough

1 (7 ounce) jar marshmallow fluff

1 (8 ounce) package of cream cheese

 

Preheat oven to 350

Smooth cookie dough into a single layer about 1/4 inch thick

I spread mine on parchment paper then baked it on a pizza stone

Bake 10-15 minutes until the edges are brown and center is no longer doughy

While that bakes, blend fluff and softened cream cheese until smooth

After the dough has been removed from the oven, spread fluff mixture evenly on top

Top with fruit and berries

Chill before serving

Pineapple Cranberry Chicken

4 skinless, boneless chicken breast

1 (16 ounce) can whole cranberry sauce

1 (20 ounce) can pineapple, drained

1/2 cup cherries

1/2 teaspoon ground cinnamon

 

Preheat oven to 375 degrees F

Place chicken in a lightly greased 9×13 inch baking dish

Pour cranberry sauce, pineapple and cherries over chicken

Sprinkle with cinnamon

Cover dish and bake in the preheated oven for 25 minutes

Remove cover and bake for another 15 minutes

Internal temperature should read 165 degrees

Sweet Cole Slaw

Sometimes I just get it right and this was one of those times. I made Cole Slaw for a family get together and there were no leftovers!

8 cups shredded cabbage

1 cup shredded carrots

3/4 cup sour cream

3/4 cup mayonnaise

3/4 cup sugar

 

In a large bowl combine cabbage and carrots

Whisk together sour cream, mayonnaise and sugar until dressing is smooth

Pour dressing over coleslaw mixture and toss to coat

Refrigerate at least an hour before serving so the flavors blend
