Chili Topped Baked Potatoes

A great change up for Baked Potatoes

Chili

1 pound of ground pork
Big tablespoon of chopped garlic
1 large onion chopped
1 teaspoon dried oregano
1 teaspoon hot pepper sauce
28 ounce can chopped tomatoes
1/4 cup Worcestershire sauce
1 tablespoon brown sugar
1 tablespoon mustard
Few shakes of ground anise seed
Few shakes of Adobo

Cook pork and onion over medium-high heat till pork is browned and onion is cooked.

Add all the ingredients except for the tomatoes. Mix well, add the tomatoes and bring to a boil.

Reduce heat to low and simmer for 1 hour. Stir occasionally to prevent burning on the bottom.

Baked (Microwave) Potatoes

Poke many fork holes in potatoes

Microwave on high for 10 minutes

Bake in 350 degree oven for 20 minutes

Top Potatoes with chili, sour cream, lettuce, cheese, tomato ect…

So good!!!!

Pork Dijon

This is really good. Pork is tender and the cream sauce is very tasty!

This will make about 6 servings

2.5-3 pound boneless pork filet or tenderloins
4 tablespoons Dijon mustard
1 tablespoon oil
2 tablespoons butter
2 shallots or onions minced
2 garlic cloves minced

1 cup Marasla wine
1 tablespoon Dijon mustard
1 cup heavy cream

Preheat oven to 350 degrees

Coat pork generously with mustard

Heat oil in a large skillet over medium high heat

Brown pork in the skillet turning to evenly brown

Transfer pork to a greased 9×13 baking dish

Bake covered for 20 minutes, turn meat in pan and bake another 20 minutes

While that is baking, melt butter in the same skillet you browned the meat in

Cook the shallots or onions in the butter until soft over medium heat

Stir in Marasla, mustard and cream

Cook until the liquid is reduced by half

Slice pork and spoon sauce over meat

Serve with your favorite side dishes

Lemon Lime Chicken

This was something I just threw together without much thought. Came out pretty good!

This will serve 2

2 boneless skinless chicken breast
2 tablespoons lime juice
Lemon Pepper seasoning
1 medium size tomato sliced
Romano-Parmesan Cheese, freshly grated

Preheat oven to 350

Grease a 9×9 baking pan

Place chicken in pan and season with lemon pepper

Flip chicken over

Pour lime juice on chicken and season with more lemon pepper seasoning

Top with tomato slices and fresh grated cheese

Lightly cover with foil and bake for 30 minutes or until the internal temperature is at least 160 degrees

Tomato and Avocado Salad

This salad will serve 2

1/2 teaspoon Dijon mustard
2 tablespoons olive oil
1/4 cup balsamic vinegar
Black pepper to taste
Garlic powder or salt to taste
1 avocado peeled, pitted and sliced
1 large tomato cut into wedges

This has the best flavor when it is served at room temperature

Wisk together the mustard, olive oil, and balsamic vinegar

Arrange the tomato and avocado on a plate

Sprinkle with garlic and pepper

Drizzle with the balsamic dressing

Serve immediately

Broccoli-Cauliflower Salad

If you invite me to your house for a cookout, I am bringing this!  We are cooking on the grill for lunch.  It’s one of our favorites!

 

This will make about 4 servings

2 cups broccoli florets

2 cups cauliflower florets

Sunflower seeds

Craisins

3/4 cup shredded cheddar cheese

1/2 cup bacon bits

3/4 cup mayonnaise

1/4 cup sugar

1 tablespoon white wine vinegar (I used rice vinegar since I didn’t have white wine vinegar)
Cook bacon and chop into bits

In a medium size bowl, mix broccoli, cauliflower, cheese, bacon, sunflower seeds and craisins

Wisk together the mayonnaise, sugar and vinegar

Dressing will be very thick

Spoon onto salad and mix well

Extra dressing can be served on the side and added as needed
This is my new favorite salad. I plan on making it after every trip to the Farmers Market.

Bacon Ranch Chicken Casserole

This made a lot, but was real good!

This will make 6 servings

2 cups cooked, chopped chicken
2 cups pasta cooked according to package directions
1/4 cup bacon bits
1 clove of garlic, minced
2 Tablespoon flour
1/2 cup Milk
1 cup of Ranch Dressing
3 Tablespoon of butter
1 1/2 cups of shredded cheddar cheese
1 cup chopped tomatoes
1/2 cup bread crumbs

Preheat the oven to 350 degrees

Cook garlic in butter for 2 minutes

Add chicken and flour
Cook 1 minute and mix well

Add milk and ranch dressing
Cook over medium heat 2-3 minutes or until thick

Stir in half the cheese
Mix in the noodles and tomatoes

Spoon mixture into a 9×13 greased baking dish
Top with bacon bits, the rest of the cheese and bread crumbs

Bake uncovered for 15 minutes or until bubbly

Serve with a salad and fresh baked bread

Strawberry Pie

You have got to try this pie! It is Korbyn approved!

4 cups sliced strawberries
2 tablespoons corn starch
1 cup sugar
1 cup water
3 oz package strawberry gelatin
10 inch pie shell, cooked or ready to use
Whipped topping

Blend corn starch and sugar
Pour into small sauce pan and add water
Stir over medium heat and cook until thick, 3-5 minutes
Remove from heat and add gelatin
Stir until it dissolves
Pour over strawberries

Gently mix until all the strawberries are coated
Pour strawberry mix into pie shell

Chill for 2-3 hours or until set
Serve with whipped topping

BLT Bruschetta

These came out real good. Didn’t want to make sandwiches so this snack was just right!

Loaf of baguette bread, sliced and toasted
Bacon, cooked and chopped
Lettuce, chopped
Tomato, chopped
Mayonnaise

Spread mayonnaise on toasted baguette slices
Top with bacon, lettuce and tomato
