Carrot Soup

This is another soup that tastes great with a grilled cheese sandwich!

 

Makes about 4 servings

1 tablespoon butter

1 tablespoon flour

1 cup half and half

1 1/2 vegetable broth

2 1/2 cups sliced carrots

1/4 teaspoon celery salt

1/2 teaspoon nutmeg

1/2 teaspoon 5 spice seasoning

1 tablespoon brown sugar

Shake of Parsley, Basil, Cayenne Pepper

Salt and Pepper to taste

 

Steam carrots until tender

In a stock pot, melt butter over medium heat

Stir in flour

Add half and half all at once and mix well

Stir in broth and carrots

I use my hand blender to blend into a creamy soup

Season with celery salt, nutmeg, 5 spice, brown sugar, parsley, basil, cayenne pepper, salt and pepper

Simmer 20-25 minutes

Ham & Potato Casserole

This is a great way to use up holiday ham.  There were no leftovers in our house of this dish!

 

Makes 6 servings

3⁄4 cup chopped onion
2 tablespoons margarine

1 tablespoon flour
1 dash pepper

1 cup milk

1 cup shredded cheddar cheese
1⁄4 cup mayonnaise

2 cups potatoes, cooked and diced
3 cups ham, cooked and diced

Bread crumbs

 

Preheat oven to 350 degrees

Cook onion in margarine until tender

Stir in flour and pepper

Add milk and bring to a boil, stirring constantly

Reduce heat and add cheese and mayonnaise

Stir until cheese melts

Add potatoes and ham

Pour into a greased 9×13 baking dish

Top with bread crumbs

Baked Pineapple

I have made this 3 times in the last few weeks!  Very easy to make and never any leftovers!  You can also dish this up as a dessert!

 

This recipe makes about 4 servings

1 (20 Ounce) can of Pineapple, I like to use Tidbits.

2 tablespoons sugar

1/4 cup melted butter

2 tablespoons flour

1/2 cup shredded cheddar cheese

20 Ritz crackers, crushed

 

Preheat oven to 350

Drain pineapple and reserve juice.

Combine pineapple, 3 tablespoons juice, sugar, butter, flour and cheese

Mix well and spoon into a 9×9 greased baking dish

Top with crushed crackers

Bake 30 minutes till bubbly

Dirt Dessert

This is my daughters recipe. Its fun to make and always a hit!

 

Makes 10 cups

1 (3.9oz) package of chocolate flavored instant pudding

2 cups cold, fresh milk

8 ounce tub whipped topping

15 or more, Oreo cookies finely crushed and divided in half

Gummy worms

10 clear plastic cups (6-7 oz size)

 

Whisk pudding mix and milk in a large bowl for 2 minutes

Let stand 5 minutes

Stir in whipped topping and ½ of the cookie crumbs

Spoon mixture evenly into cups

Only fill about half way

Top with remaining cookie crumbs

Refrigerate for about an hour

Top with worms right before serving
