Lasagna Flatbread

I had some flatbread to use up and and thought it would make a great lasagna base. It came out really good!

 

Lasagna Flatbread

Makes 6

 

1 cup Ricotta

1/2 cup Mozzarella cheese

1/3 cup Parmesan cheese

1 egg

1 teaspoon Italian Seasoning

1/2 teaspoon Adobo or other all purpose seasoning

3/4 cup cooked sausage or other ground meat

1 cup red sauce

Mozzarella Cheese

6 flatbreads

 

Preheat oven to 375 degrees

Place flatbreads in preheated oven for 5 minutes to make them crispy

In a large bowl mix Ricotta, Mozzarella, Parmesan cheese, egg, Italian seasoning and Adobo

Cook sausage or other ground meat, drain well

Add sausage or other meat and red sauce to cheese mixture

Mix well

Spoon and spread lasagna mixture evenly on each flatbread

Sprinkle each mixture with Mozzarella Cheese

Bake 12 minutes turning half way through baking time

Enjoy!

French Toast Casserole

Since I originally made this, I have made 3 more pans and froze them in serving size portions for a quick snack. Yes, it’s that good!

 

French Toast Casserole

Makes 8 slices

 

1/4 cup melted butter

6 1/2 cups bread cubes

4 eggs

1 1/2 cups milk

1/4 cup brown sugar

1/4 teaspoon salt

1 teaspoon nutmeg

2 teaspoon vanilla extract

2 tablespoons butter

1/2 teaspoon ground cinnamon

3 tablespoons sugar

 

Preheat oven to 350 degrees

Lightly grease a 9×13 casserole pan

Pour melted butter in bottom of pan, or place pan in oven with butter to melt

In a large bowl, beat together eggs, milk, brown sugar, salt, nutmeg and vanilla

Add bread cubes and carefully mix to coat

Pour bread/egg mixture into casserole pan

Dot with butter; let stand for 10 minutes

Combine sprinkle sugar and cinnamon over the top

Bake covered in preheated oven about 50 minutes

Uncover for the last 10 minutes or until top is golden

Let sit 15 minutes before serving

Sprinkle a little confectioners’ sugar on top and serve it with butter and maple syrup

Avocado Sandwich

This sandwich has a few steps but it is so worth it! I hope you will give it a try. We really liked it.

 

Avocado Sandwich

Makes 4 Sandwiches

 

4 slices bacon, cut into 1-inch pieces

1/4 cup sweet onions, chopped

Mayonnaise

8 slices Italian bread, toasted

1 avocado, mashed

Sliced tomato

Sliced cucumbers

Garlic salt and black pepper to taste

 

Place the bacon in a skillet and cook over medium heat, until browned, 5 to 7 minutes

Remove from pan and set aside

Remove extra bacon grease from pan leaving a light coating in the pan

Add onion to bacon grease; cook and stir until onion is soft, about 5 to 7 minutes

Spread mayonnaise on one side of each slice of toast

Spread mashed avocado onto one side of one piece of toast

Top avocado with tomato slices, cucumbers, onion and bacon mixture

Sprinkle with garlic salt and black pepper

Place remaining slice of toast on top

Enjoy!

 

Chicken Breasts in Caper Cream Sauce

This came out really good.and it didn’t take long to put together.

 

Chicken Breasts in Caper Cream Sauce

 

4 boneless, skinless chicken breast halves, sliced or pounded thin

1 teaspoon lemon pepper

1 teaspoon salt

1 teaspoon dried dill weed

1 teaspoon garlic powder

6 tablespoon butter

2 cloves garlic, minced

1 cup whipping cream

4 tablespoons capers, drained and rinsed

 

Season chicken breasts with lemon pepper, salt, dill weed, and garlic powder

Let sit 15 minutes

Melt butter in a large skillet over medium heat

Place breasts and garlic in skillet, and increase heat to medium-high

Turn chicken frequently, until brown, about 5 minutes

Reduce heat to medium, and cook 5 minutes, until breasts are cooked through

Remove chicken and keep warm

Return skillet to stove, and increase heat to medium-high

Whisk in whipping cream, whisking continuously until reduced to sauce consistency, about 3 minutes

Remove from heat. Stir in capers

Pour sauce over chicken, and serve

 

Serve with vegetable and mashed potatoes

1000 Island Dressing

This dressing is great for a salad, burger or even to dip your chips into!

 

1000 Island Dressing

 

1 cup mayonnaise

1/2 cup ketchup

3/4 cup sweet pickle relish

1 tablespoon sugar

1 teaspoon onion powder

Salt and pepper to taste

 

In a medium sized bowl, mix together the mayonnaise, ketchup, relish, sugar, onion powder, salt and pepper until thoroughly combined

Let dressing sit for about 15 minutes before serving for the flavors to blend

 

Enjoy on a fresh garden salad, burger or even as a dip for chips!

 

Sicilian Olive Chicken

This is the perfect recipe if you are short on time. There is so much flavor in this dish and it comes together quick.

 

Sicilian Olive Chicken

Serves 4

 

1 (14 ounce) can diced tomatoes

1 1/2 cups frozen chopped spinach, thawed

2 garlic cloves, minced

1/3 cup halved green olives

1/3 cup halved kalamata olives

1/3 cup sundried tomatoes, sliced

1 tablespoon capers, rinsed

1/4 teaspoon crushed red pepper, or to taste

4 boneless, skinless chicken breasts

Pepper, garlic salt and paprika to taste

1 tablespoon olive oil

 

Combine tomatoes, spinach, garlic, olives, sundried tomatoes, capers and crushed red pepper in a bowl

Sprinkle both sides of chicken with pepper, garlic salt and paprika

Heat oil in a large skillet over medium-high heat

Cook the chicken until browned on one side, 2 to 4 minutes

Turn it over; top with the tomato mixture

Reduce heat to medium, cover and cook until cooked through, 3 to 5 minutes

Braided Pizza Loaf

After several tries, I finally got this one right. Everyone loves it and I serve it along with our Friday Night Pizzas!

 

Braided Pizza Loaf

Makes 1 Loaf

 

1 (13.8 ounce) refrigerated pizza dough

Pizza sauce

Shredded mozzarella cheese

Sliced pepperoni

1 Tablespoon olive oil

1/2 teaspoon garlic powder

1 teaspoon dried Italian seasoning

2 Tablespoons grated Parmesan cheese

 

Preheat oven to 425 degrees

Unroll pizza dough on a greased baking sheet or parchment paper

Spread pizza sauce down the middle of your dough

Add mozzarella cheese and pepperoni on top of sauce

Cut 1-inch diagonal strips up each side of the dough

Fold 1-inch strips up and over pizza filling, alternating sides to get a braided look

Brush the tops of the braided dough with olive oil and then sprinkle with the garlic powder, Italian seasoning and Parmesan cheese

Bake for 15-20 minutes, or until golden brown

Let cool for a few minutes then cut into slices and serve
