Garden Salad To-Go

This salad is great to make ahead.  I used a wide mouth, pint mason jar.

 

Start with adding dressing of your choice.

Next all all the crunchy ingredients. Tomatoes, carrots, celery, radishes ect

Craisins, bacon bits and chopped egg is next

Lettuce must be added last so it does not get soggy in the dressing.

Shake and enjoy!

Try not to pack it to full or it will be tough to shake.

Caesar Salad Dressing

6 cloves garlic minced

3/4 cup mayonnaise

2 tablespoons Parmesan cheese

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

1 tablespoon lemon juice

Salt and pepper to taste

 

* Mix all ingredients above and refrigerate until ready to use.

Yogurt Chicken

This recipe will serve 4

4 skinless, boneless chicken breasts

6 oz plain yogurt

1 tablespoon lemon juice

1 cup seasoned bread crumbs

1/2 teaspoon garlic powder

salt to taste

1/4 cup butter

Preheat oven to 350 degrees.

Pour yogurt in a bowl and stir until smooth. Add lemon juice and stir together. (Note: If you do not stir the yogurt first, the lemon juice will make the yogurt curdle.)

In a bowl mix together the bread crumbs, garlic powder and salt.

Grease a 9×13 inch baking dish.

Rinse chicken breasts and pat dry.

Dip each breast in the lemon and yogurt mixture, then in the bread crumb mixture, coat completely.

Place coated chicken in the baking dish and top each breast with a full pat of butter. Cover with foil and bake in the preheated oven for 45 minutes.

Sweet Hawaiian Chicken

Sweet Hawaiian Chicken

This recipe will serve 4

4 skinless, boneless chicken breast

1 cup pineapple juice

1/2 cup brown sugar

1/3 cup soy sauce

Flour to coat chicken

Few tablespoons of oil for frying

Cut chicken into bite size chunks.

Coat with flour and pan fry until browned.

In a sauce pan, mix pineapple juice, brown sugar and soy sauce to a boil.

Add browned chicken to sauce pan and simmer.

Sauce will thicken as it cools.

Slow Cooker Honey Garlic Chicken

This recipe will serve 4

2 1/2 to 3 pounds chicken
1/2 cup honey
1/2 cup low sodium soy sauce
1/4 cup blackberry jam or any dark jelly or jam
1/4 cup hoisin sauce
2 Tablespoons olive oil
3 cloves garlic, minced
1/2 cup diced onion
1 Tablespoon cornstarch
Sesame seeds

Place chicken in slow cooker

Mix together honey, soy sauce, jam, hoisin sauce, olive oil, garlic and onion.  Pour over chicken.

Cook on low 4-5 hours.

Remove chicken to side plate and shred.

Head liquid in sauce pan.  Mix cornstarch with 3 tablespoons of water and add to boiling liquid.

Boil for 3 minutes or till thick, then add to shredded chicken.

Sprinkle sesame seeds on top and enjoy!

Sausage and Peppers

Sausage and Peppers

2 tablespoons olive oil

1 1/2 pounds of Italian sausage links

1 each red, green and yellow pepper sliced

1 large onion sliced

2 cloves garlic chopped

12 ounce of beer

6 ounce can of tomato paste

1 tablespoon oregano

1 tablespoon hot sauce

salt and pepper

 

* Heat olive oil in a large heavy skillet over medium high heat.

* Cook sausage until browned on all sides. Remove sausage from pan, and set aside.

* Pour in 1/2 bottle of beer to de-glaze the pan, scraping up any blackened bits from the bottom.

* Place the peppers, onions and garlic in the pan.

* Stir in the remaining beer and the tomato paste.

* Season with oregano, hot sauce, salt and pepper.

* Cover, and simmer until onions and peppers are tender.

* Slice the sausages into bite size pieces, and add to the peppers.

* Cover, and simmer until sausage is cooked through.

This can be served as a main dish or on hoagie rolls with cheese.

Pretzel Chicken

This recipe will serve 4

4 boneless, skinless chicken breast

3 eggs

2 cups finely crushed pretzels

1/2 cup grated parmesan cheese

1 tablespoon Adobo or other herb seasoning

1/2 teaspoon cayenne pepper

1 teaspoon paprika

1 tablespoon dijon mustard

1 tablespoon honey

Preheat oven to 350.

Beat the eggs in a bowl with Dijon mustard and honey.

Mix together the crushed pretzels, Parmesan cheese, Italian seasoning, cayenne pepper, and paprika in another bowl.

Rinse the chicken breast halves, and pat dry. Dip the chicken breasts into the beaten egg mixture, then press into the pretzel crumb mixture. Gently shake off excess crumbs.

Place the breaded chicken breasts into a greased 9×13 baking dish.

Drizzle melted butter over chicken, cover with foil and bake 30-40 minutes.
