Dinner Rolls


Recipe makes 9 rolls

1/2 cup and 2 tablespoons of warm milk

1 teaspoon active dry yeast

2 tablespoons sugar

1 egg

2 tablespoons softened butter

1/2 teaspoon salt

1 3/4 cup all purpose flour

Pour milk into mixing bowl.  Sprinkle yeast on top.

Mix in sugar, egg, butter and salt.

Add flour.  Knead for 10 minutes on speed 2.

Cover bowl and rest in a warm place until it doubles in size.  About an hour

Punch down dough, cover and rise 2 more times

Break dough into even 2-3 inch pieces.  Roll and set into a greased baking dish.

Cover and rise again until double in size.

Egg wash rolls before baking.  1 egg mixed with 1 tablespoon water

Bake at 350 for 22-30 minutes


Skillet Fried Potatoes


Makes about 4 servings

1 quart of potatoes

Half a stick of butter or margarine




Melt butter in a large sauté pan over medium high heat

Add potatoes and season with paprika and Adobo

Scrap potatoes from the bottom and stir often to evenly brown

After about 10 minutes or when crispy, add a tablespoon of brown sugar



Mix well and pull potatoes to one side of skillet


Add eggs


Add any other toppings


Remove from heat so the cheese can melt and eggs wont burn



Slow Cooker Roasted Whole Chicken

2 teaspoons salt and paprika

1 teaspoon each of cayenne pepper, onion powder and ground thyme

1/2 teaspoon garlic powder and pepper

1 whole chicken

Coat chicken with seasoning mixture and set aside 6-8 hours or overnight

Cook chicken in slow cooker on low for 6-8 hours.  Internal temp at thickest part of chicken should read 165.

Let chicken rest for about 10 minutes before serving.
