Ham and Broccoli Quiche


This recipe serves about 6

1 refrigerated pie crust room temperature

1 1/2 cups cubed cooked ham

1 1/2 cups shredded cheese

1 cup broccoli

4 eggs

1 cup milk

1/2 teaspoon salt

1/2 teaspoon ground dry mustard

1/2 teaspoon pepper

Heat oven to 375 degrees. Place pie crust in 9-inch pie pan.

Mix together ham, cheese and broccoli, dump into pan.

In same bowl, beat eggs and milk. Stir in dry mustard, salt and pepper.

Pour into pan over ham, cheese and broccoli mixture.

Bake 40 to 45 minutes or until knife inserted in center comes out clean.

Let stand 5 to 10 minutes before serving.



Creamed Eggs


Recipe makes 3 servings

6 hard boiled eggs, peeled

1/4 cup butter

1/4 cup flour

1 1/2 cup milk

Salt, pepper and paprika to taste

6 slices toast

Chop the eggs into small pieces and set aside.

Melt the butter in a saucepan set over medium heat. Stir in flour until smooth.

Very slowly mix in the milk so that no lumps form.

Stir constantly until the mixture comes to a boil.

Mix in the eggs. Serve over toast and season with salt, pepper and paprika.

Monkey Bread



My parents came to visit last week and I fell back on a favorite breakfast snack for us to start our adventurous sightseeing day with! Hope you enjoy this too!

Recipe makes about 8 servings

1/2 cup sugar

1 teaspoon cinnamon

2 cans refrigerated buttermilk biscuits

1/2 cup raisins or Craisins

1 cup packed brown sugar

3/4 cup melted butter or margarine

1 teaspoon vanilla


Heat oven to 350 degrees. Grease Bundt pan

Mix sugar and cinnamon

Cut each biscuit into quarters

Coat with sugar and cinnamon mixture

Arrange in pan with raisins/Craisins along with the biscuit pieces

Pour vanilla, brown sugar and melted butter mixture over top

Bake 25 to 35 minutes or until golden brown and no longer doughy in the center

Cool in pan 10 minutes

Turn upside down onto serving plate; pull apart to serve
