Avocado Egg Salad

Tried something new for lunch this week and it came out pretty good!

 

Avocado Egg Salad

Makes 4 Sandwiches

 

3 hard boiled eggs, peeled and chopped

1 avocado, peeled, pitted and chopped

1/4 cup minced onion or 1/4 teaspoon onion powder

1 1/2 tablespoon sweet relish

1/2 tablespoon Dijon mustard

2 tablespoon plus 2 teaspoons mayonnaise

Salt and pepper to taste

 

Mix together the chopped eggs and avocado in a medium bowl.

Add the rest of the ingredients listed above and blend well.

Let the salad sit for a few minutes in the refrigerator so the flavors can blend.

Enjoy topped on a fresh garden salad or as a sandwich made with your favorite toppings.
